It was that dreaded word.
I just didn't have it.
And if you want to make your own bread, it is a necessity.
I would think about it.
And even tried it once or twice.
But never fell in love with the whole idea.
I can just go to the store and buy it myself.
It is just.not.the.same!
Well, the time came when I had 3 kids, all UNDER the age of 4.
Lots of naps, schedules etc, etc.
Which, for me, meant I was home. A lot.
This was about the time I took up blogging, since I was home anyways.
But I also started experimenting in the kitchen.
Making something yummy for my husband to enjoy when the kids were all in bed
started to become a fun hobby.
At the top of the list, still is homemade pita and hummus.
Simple and delicious. Yes, you read that right. Simple.

3 c. unbleached white flour (or whole wheat if you prefer)
1 1/2 t. salt
1 T sugar
1 packet yeast
1 1/4 c. warm water
2 T Olive Oil
Mix yeast with 1 c. water and let sit for 5 minutes. Meanwhile, mix flour, salt and sugar. Add the water with the yeast when ready then add rest of the water and olive oil. Stir together. Once ingredients form a ball knead dough (or use a stand mixer) for 6-8 minutes. When done, place in a bowl that has been lightly coated with oil. Cover bowl with damp kitchen towel. Set aside to rise for 90 minutes. When time is up, punch down and divide into 8-10 pieces and roll in to balls. Place on surface lightly coated in flour and cover with damp kitchen towel for 30 minutes. Flatten dough. To cook I use a cast iron griddle on the stove top. You can also use a cast iron pan turned upside down. Place on preheated, lightly oiled pan over medium-high heat. Cook on each side 2-3 minutes each.
